[DOCS-15263] Add Journey Paths Analysis chart docs (#39342)
* [DOCS-15263] Add Journey Paths Analysis chart docs Add a new Charts page documenting Journey Paths Analysis as a standalone chart type, update the Charts overview to list it, and remove the now-redundant journey paths description from the Funnel Analysis page in favor of a further reading link. * [DOCS-15263] Restructure Journey Paths Analysis docs and add sidebar entry Simplify the Journey Paths Analysis page into numbered steps, add a customization callout screenshot, and add the missing sidebar nav entry.
