Document how to set credentials

It would be useful to add some documentation for setting custom credentials, when using a released version of jupydrive-s3 (not local).

Currently it looks like there is some logic relying in the use of process.env here:

I'm having issues configuring credentials on released version as well. Documentation for it would come in handy.

For reference, there is a fairly recent secrets manager extension for JupyterLab, which could be relevant for this extension: https://github.com/jupyterlab-contrib/jupyter-secrets-manager

A credentials provider was added in #44 and is available in the latest release v0.1.0.

This section of the README.md shortly describes how the credentials settings can be accessed.

When used in development mode, the environment variables mentioned above can be used instead.
