Add Torchvision functions in the matrix

🙏 Thanks for providing the MPS operators coverage matrix. Is it possible to add all functions from Torchvision as well?

Hi, Torchvision ops are outside PyTorch and therefore not included in the matrix automatically. If you would like to have them in the matrix, you can manually register them in config.yml and submit a PR here.
