Is sudo (or root) required for EIB image creation?

AFAIK it doesn't, but it requires the --privileged flag. Did you find any issues? Did you tried with/without it?

Some time ago there was an subuid/subgid issue, but that might have been
an old OS version issue (cgroupVersion: v1).
Since then I have used 'sudo' to be on the safe side.

I guess this can be closed without modifying the documentation.
