Export a version of the pipelines used

In the workflow, a copy of the pipelines should be exported to the user project in a folder like `./data/data-pipeline/R`, along with the metadata of the workflow run, such as the last date it was run. That way, if anything happens with the package, then the individual projects that may have been affected can remain reproducible.
