update MEI sources to version 5.1

MEI 5.1 was released in January 2025: https://github.com/music-encoding/music-encoding/releases/tag/v5.1

The changes to the ODD schema are probably not that hard but all our files need to be modified with an updated `@version` attribute on the root element.
