Problems trying to use XmlMapper.convertValue()

Due to work-arounds that XmlMapper needs for data- binding, basic usage of XmlMapper.convertValue() fails (at least with 2.3.0-SNAPSHOT). It would make sense to ensure that overrides would not break conversion functionality.

Fixed problems from serialization-side of things, tested with basic array/list conversion tests (copied from jackson-databind).
