docs(workshops): apply reviewer corrections to Nairobi workshop doc
- Fix project count: 40 projects → 12 finalist projects (per adosiawolf) - Add Republic of Congo to countries list and geographic distribution (per adosiawolf and Crypto2099) - Broaden community finance from Burkina Faso only to multiple countries (per Crypto2099) - Add project focus areas: pharmaceutical provenance, cultural preservation, environmental impact, insurance and risk mitigation (per Crypto2099)
