Bump supercharge/mongodb-github-action from 1.12.0 to 1.12.1

Update the action that starts MongoDB in the Linux test jobs from 1.12.0 to 1.12.1. Its only executable upstream change replaces the obsolete docker:stable client image with docker:latest; the MongoDB startup script is unchanged. The repository still tests the same MongoDB 5.0 server and Julia matrix.

Refresh the existing branch against current master, preserving the Windows initialization and native-stream checks and all recent package fixes. The complete diff against master changes one workflow line. Package source, tests, documentation, dependency versions and coverage settings are unchanged.

Validation: reviewed the complete upstream tagged action comparison and the complete current workflow; git diff --check passes. All 20 fresh head jobs and all 10 merged-master jobs pass, including every native, Windows initialization/stream, and nightly lane. All 18 head uploads and all nine main uploads were accepted for their correct repository/full commit SHA, and every distinct coverage report finished processing at 84.71%. Both Codecov checks pass. The published API manual returns HTTP 200, and all 62 Julia source links point at merged commit 179b73b.

Merged as 179b73bedb20a5adc58521a26298bda9afb6852e after the refreshed branch passed all 20 hosted jobs. The squash merge preserves the tested tree.

The merged-master CI run now passes all 10 jobs, including all nine native lanes and every nightly/Windows check. All 18 head and nine main coverage uploads were accepted for the correct commits and finished processing at 84.71%. The published API manual returns HTTP 200; all 62 Julia source links reference this merge.
