[Subtask] Extract Interview Status from Email

Description

Predicts interview status without using Gemini API (No Response, Interview Scheduled, Request for Availability, etc.)

Acceptance Criteria

• Write a function in backend that takes in an email (any combination of attributes that you think is important) and predicts interview status without using Gemini API
• Write a list of potential statuses to choose from and save as JSON file
