Update dependencies and perform required changes

• Update svelte-jsoneditor, this needs some minor adaptations
• Update the uppy-related packages. Here the consequences are not fully clear yet, but breakage is likely if not done careful
• Figure out the package that breaks Metador build when updating npm dependencies and fix the issue
