Unfortunately, projections

Motivated by one student working on Aotearoa and another working on Alaska this term, which both wrap around the 180° line. We solved this with clipping the bounding box but this is a little akward.

This can be sorta solved with

i) projections for AbstracOccurrences, just need to overload interpolate with a dest argument
ii) projections for polygons? @gottacatchenall how would the mask/clip operations survive this?

For ii), the _reproject method should be able to be repurposed as is.

e.g.

works. it's inefficient to use GI.coordinates as mentioned in #455 buts its probably fine for now. The nz[1].geometry is because there isn't a definition for Features/FeatureCollections but thats an easy fix.
