Should we update LICENSE.txt for this repository so it says UKRI/ Manchester not [name of copyright owner] ?

Separately, is it acceptable to just link to this license in our demos rather than the full license information we currently have at the top? I think this makes the demos more confusing because there is a lot of text to read anyway
