What happened?

As per video (to clarify) it used to keep black until white zones started showing. Now goes and back from black to preview.

It happens with every mask. It generates previews every time the slider is moved. In the beginning of Ansel this was not the behavior (or at least it wasn't noticeable).

It is quite annoying to edit pictures this way.

Yes, I've noticed this behavior with other masks as well when the mask is shown and you move sliders, like in parametric masks. It is indeed quite annoying

Changing a mask has to trigger a recomputation. However that recomputation shouldn't happen until you exit mask preview mode
