improvement: rpc methods improvement

## Description

We have both grpc and http endpoints available https://github.com/babylonlabs-io/rollup-finality-gadget/tree/main/server
We need to:

1. Test what is working
2. Decide which methods we want to keep
3. Decide if we need to add more methods
