Update .github/workub/workflows/pr-label-conventional-commit.yml to reflect current available labels #596

Based on a PR that failed the CI due to label assigning, see https://github.com/ecmwf/anemoi-datasets/actions/runs/23635234248/job/68932595450#step:3:81, I think the culprit is .githgithub/workub/workflows/pr-label-conventional-commit.yml since it uses the nouns there. The PR was originally titled "chore: ..." but had to be changed to "fix:" in order to pass the CI. I think it would be useful to update the corresponding workflow! I believe it would require to create a new label like e.g., "chore", however, hence why I am opening an issue as opposed to a PR directly.
Similarly, it seems like the auto labeled "contributor" and "tests" should be added as valid labels since contributor PRs will fail CI:
