Broken external links in docs/wiki/EL/JSON-RPC.md

Multiple external references in docs/wiki/EL/JSON-RPC.md currently return HTTP 404 errors due to upstream URL changes (OpenRPC, Reth, Infura).

Updated, working URLs are available. I will submit a PR shortly to replace the broken links with their current equivalents.
