process: update supported database versions

Currently, Pop supports the following versions as the minimum supported version.

• postgres:10
• cockroachdb/cockroach:latest-v21.1
• mysql:5.7

Time to update supported versions postgres, cockroach, and hopefully mysql too :-)

• EOS date for Cockroach v21.2 is 2023-05-16
