Upgrading to koopjs/koop-core

I noticed that the package.json file in this repository is using the deprecated koop package.

Is this template project still relevant, even though it's on the deprecated koop package and not yet using the recommended @koopjs/koop-core?

Hello @rjrudin - I think it's still relevant, it's just slipped through the cracks. We just need a PR with an upgrade.
