chore: fix CHANGELOG 6.0.0, prevent git-cliff historical commits, improve install.sh

- Restore correct 6.0.0 changelog entries (git-cliff was pulling all history)
- Add ignore_tags to cliff.toml to exclude pre-v6 commits
- Check saved install_mode preference before .devcontainer auto-detection
