[TODO] Change DEFAULT_VERSION in settings.py to v2

## Description
The current DEFAULT version in settings.py is v1 (line 177 on my local copy). It should transition to v2.

This will likely cause a few differences on the root, so it should be done carefully and late, but it's unlikely to be a significant problem.
