Deployment Guide

As we ramp up for a v1 release of Coop, we've heard the feedback that a deployment guide (#207) would be a welcome addition to the docs. With the big docs revamp and new section covering database columns we're partway there, but I would love to hear from anyone deploying (or considering deploying!) Coop:

• What information is missing that would help your deployment?
• Is the current docs structure working for you, or are things not where you'd expect?
• What did you have to learn that you wish would have been written down/obvious from the start?

Our goal is to take the collective knowledge that we've all gained and help distill it into something that will help everyone out when they go to deploy Coop—ultimately making it easier to keep people safe across more of the Internet.

Love the docs so far, one thing I have a question about that I haven't seen addressed beyond a comment in the code, what is the intended purpose of ITEM_QUEUE_TRAFFIC_PERCENTAGE in .env? The default is only sending 5% of items to BullMQ, wondering if this is a knob those of us who host need to turn or not. Might be good to address in the docs. Thanks.
