error: unexpected argument '--probe-slow' found

Trying to use --probe-slow. It's documented, but not in my build for some reason? Neither is --probing-speed

$ target/release/av1an --help | grep -iE -- "--probe|--probing"

--probing-rate <PROBING_RATE>
--probe-video-params <PROBE_VIDEO_PARAMS>
--probing-vmaf-features [<PROBING_VMAF_FEATURES>...]

--probing-vmaf-features default motionless
--probing-stat <PROBING_STAT>

I don't have any other error messages to go on.

--probe-slow has been replaced by --probe-video-params copy

The --probing-speed parameter has been removed. To achieve the same effect, you can specify a faster preset directly in --probe-video-params
For example, if you are encoding with the svt-av1 encoder using
--video-params "--preset 2"
you can specify a faster preset for probing:
--probe-video-params "--preset 7"
