vhost-device-gpu: Update changelog and coverage configuration

Update project documentation and test coverage configuration:
- Update CHANGELOG.md documenting the refactoring
- Update coverage_config_x86_64.json for new test coverage
  (reflects drop in coverage due to gfxstream tests
  excluded from CI)
