Add signature logging when submitting validator duties

**Description:**
Currently, when validator duties (attestations, proposals, sync committee and more) are submitted to the beacon chain, there's no logging of the actual signature being submitted. This makes it difficult to debug signature-related issues or verify that correct signatures are being broadcast.

**Feature Request:**
Add log entries that include the signature when duties are submitted
