Adjust stacks & demos requests and PVC sizes

Some stacks/demos have excessive requests. This will prevent users with weaker machines to run the demos, or at least makes it seem so. Especially PVC sizes are sometimes way too large for Postgres, Redis and Minio.

To fix this: Go through a demo, adjust sizes and make sure it still runs.
