Or if you don't want third-parties, just subscribe to Release Feed (RSS or not) via the Watch button on GitHub.

Plus, theoretically if you want to automate that, just use https://cli.github.com/ in a little script to get notified about a release (optional) and then going to download+open with curl on the latest windows release installer with your favorite arch, the base installer will do the ungoogled-chromium update automatically once opened.
