Ensure CI builds proper `Mac/aarch64` binaries

#88 started to build all supported binaries on CI.

0.2.1 used binary from gotson#1
the next release will ship with a binary build "locally" via Github Actions

This issue will serve as a place as a notepad, where I can write down all macos&ARM related updates.

I managed to run tests on macOS 13.2 (aarch64) https://scans.gradle.com/s/sxnyqobt3egde which surprisingly completed with a success 😮 Which seems to suggest, the binaries build using updated gotson's image do actually work - link

It seems like everything work as expected. I was able to read and write webp images on M1 mac (via Bitrise) 🎉
