Examples for filtering letstalktech events

Provide examples for filtering letstalktech events by source, time windows, etc.

This seems to work but I'm only seeing events from dhair2:

e.g.:

Note that we have some examples at https://github.com/uwcirg/logserver/blob/develop/README.md#api-use , but they don't address the current schema in any depth.

To access the backing postgres database for the above URL, invoke docker compose as follows:

docker compose exec postgres psql postgres://app_user:secret@postgres:5432/app_db -c '\dt api.*'
