My system.log is giving me this:

Seems to happen everytime the Magento cron runs.

Had something to do with another class trying to rewrite Mage_Catalog_Model_Product. So I just made Elite_Vaf_Model_Catalog_Product extend from the other class that was already rewriting the Mage_Catalog_Model_Product.

Still don't completely understand how that ended up with autoload() trying to load VF/Product.php though.

Actually, I'm going to reopen this now that I understand what's going on:

1- VF rewrites Mage_Catalog_Model_Product with Elite_Vaf_Model_Catalog_Product. The particularly interesting bit:

    function __construct()
    {
        $this->vf_product = new VF_Product;
        parent::__construct();
    }

2 - Since Elite_Vaf_Model_Catalog_Product is now the goto class instead of Mage_Catalog_Model_Product, any other extension referencing catalog/product is getting Elite_Vaf_Model_Catalog_Product

3- For instance, I have an extension that uses cron jobs and in that job there's reference to catalog/product. So the Elite_Vaf_Model_Catalog_Product gets instantiated.

4- The problem, which seems to be cron specific: The VehicleFits never hits the bootstrap() which uses the composer autoloader which in turn properly loads the class for new VF_product. This is because none of the observed events are triggered in cron mode therefore bootstrap() never gets ran. So what you end up with is the default Varien_Autoload which obviously can't find the VF/Product.php class due to it's naming convention.
