Add a synthetic full-session ES replay dataset

Create a normalized replay fixture that looks like a small but complete ES intraday session.

Acceptance criteria:

• Use the normalized JSONL message contract from docs/adapters.md.
• Include underlying ticks and option volume ticks.
• Keep the file small enough for the repo.
• Add a README or docs note showing how to run it with --replay.
