zippy: Support system params via CI_MZ_SYSTEM_PARAMETER_DEFAULT

Currently testing with: bin/mzcompose --find zippy down && CI_MZ_SYSTEM_PARAMETER_DEFAULT="enable_rbac_checks=false;enable_statement_lifecycle_logging=false" bin/mzcompose --find zippy run default --scenario=KafkaSources
