[kafka] Use our fork

Using our fork as we have this merged into our fork: segmentio/kafka-go#1365

We need this for KRaft-based Kafka clusters.

Note

Switches to the artie-labs/kafka-go fork via replace and sets a 30s KeepAlive on the Kafka Dialer.

• Dependencies:
  • Replace github.com/segmentio/kafka-go with fork github.com/artie-labs/kafka-go in go.mod (via replace), updating go.sum accordingly.
• Kafka connection:
  • Set KeepAlive: 30 * time.Second on kafka.Dialer in lib/kafkalib/connection.go.
