This pull request updates token configuration files for the CCIP v1.2.0 release, primarily adding new token support on testnets and cleaning up mainnet lane configurations. The most notable changes are the addition of the LBTC token to several testnets, the inclusion of USDC on a new testnet, and the removal of unused LINK configurations from mainnet lanes.
