some mods to rhel to build centos

This is to attempt to build a rhel 7.9-ish flavor of this. RHEL is EOL at 7.9, but Centos still has a 7.9 in their docker hub, so trying that.

The font bits didn't work, so I commented them out. I'm not worried about fonts at the moment. :-)

The RUN sed -i -e ... lines are from jbudz ❤️

Hey @pmuellr This is awesome! Do you plan on contributing this back, if so we should create a directory to contain centos specific build configuration, so we add centos to the repertoire of os'es we support for testing kibana

Ya, this was just a quick hack to try to get Centos up, to see what the Kibana process was writing to stdout/err that wasn't being captured in the Kibana logs. So - still a lot of issues, like the fonts.

I don't really have time to finish this up, and don't think there's a pressing need for it - but did want to "record" the changes in case we need to do something like this again. Or do a better version with full support under a new directory, etc.
