This allows building flatpaks from forks of the main repository. Without this, commit SHAs that exist only in the fork won't be found, and the flatpak builds will fail.
Introduce the gradle property "flathubDir", which should (but doesn't have to) point to a local git clone of https://github.com/flathub/org.audiveris.audiveris. If it is a relative path, it's assumed to be relative to the root dir of the audiveris project. The default is "../org.audiveris.audiveris".
we don't have any submodules any more.
Also, replace the obsolete gradle-build-action with setup-gradle@v5.

here's a PR that completely removes the flathub submodule, as discussed previously.
It also contains updates to the GitHub workflows.
It obsoletes #908.
