This in the Kickstart I use for installing my CentOS7 Server.
It is using a DHCP server to assign an ip to the server and using NFS to access the ISO.
At the end of the kickstart , I run a script that will create users SSH key, perform OS update, add EPEL repository, install vscode repository ( https://code.visualstudio.com/docs/setup/linux#_rhel-fedora-and-centos-based-distributions) , etc.
I use LVM and separate filesystem (xfs and ext4) for /usr, /var, /home, ... and my SysAdmin filesystem.

Hope it will help, It include (I hink) quite a bit of option.
