Update OpenTelemetry entry

Updates OpenTelemetry entry:

• Removes Twitter link since the account is no longer in use
• Removes Gitter URL since Gitter is no longer used
• Updates Artwork URL after Add OpenTelemetry logos to graduated, remove from incubating artwork#654
• Adds blog URL
• Adds Youtube URL
• Adds StackOverflow URL
• Adds other links (Bluesky, Mastodon, LinkedIn)

Relates to cncf/cncf.io/issues/956.

For Twitter and Gitter, rather than deleting the line entirely, can you just set each of these to nothing? That will help override the existing entries when importing into the CNCF site.

@cjyabraham By nothing, do you mean "" or null? I think both of those would violate the YAML schema here: https://github.com/cncf/landscape2/blob/f7e2f365fbec31a1cfd071e992587654acdf1b30/docs/config/schema/data.schema.json#L181-L182
