Added some functions to count number of ensembles in config, so that tests only change grid/number if ensembles. There's probably a much easier way to do this in the code, so very open to suggestions!

Fixes #384
As a contributor to the Anemoi framework, please ensure that your changes include unit tests, updates to any affected dependencies and documentation, and have been tested in a parallel setting (i.e., with multiple GPUs).
