Backport

This will backport the following commits from master to 8.19:

Questions ?

Please refer to the Backport tool documentation

* Use the gharchive data stream when data_stream:true

* Use ingest pipeline by default
Do not copy created_at field to @timestamp

* Update documentation and set defaults:
* bulk size: 1000
* bulk clients: 8

* Add IT for github with datastreams

* lint

* Remove from custom params

* Move to the test_all_tracks file

* Lint

* Update github_archive/track.json
