feat: upgrade jackson to v3

• Move jackson imports from com.fasterxml to tools
• Replace JsonProcessingException with new JacksonException base exception
• Remove jsr310 and jdk8 modules registration since they are now registrated by default in the base mapper
• JsonMapper builder used to create JsonMapper object
• Extra: update lombok in order fix jdk 21 compile error and update java version in the github actions
