This doesn't let you define your endpoint, or API key via valves. It's possible by adding the relevant Phoenix specific envvars to the Pipelines container, but not everyone wants to redeploy their containers.

I made the edit to essentially ignore envvars, and have everything set in valves: https://github.com/recrudesce/pipelines/blob/phoenix-patch/examples/filters/phoenix_pipeline.py

I can add the required valves if someone is actually going to review PRs.
