feat: version bump, including Debezium 3.0.x -> 3.2.x

What this does

Close: #77

Bump all minor version we could bump.
Also, bumps the version of Debezium to latest stable 3.2.x.

Notes for the reviewer

The change in Debezium required a small tweak to the way TableAvroSchemas.build() works.
