Add support for specifying a version via settings

This allows for a custom version.

Built this locally and validated it with these settings (20251029.1 is latest):

  "lsp": {
    "tsgo": {
      "settings": {
        "package_version": "7.0.0-dev.20251027.1"
      }
    }
  }

and it shows:

$ /Users/rishi/Library/Application\ Support/Zed/extensions/work/tsgo/node_modules/@typescript/native-preview-darwin-arm64/lib/tsgo --version
Version 7.0.0-dev.20251027.1
